Polish cuisine and culture was historically influenced by few Polish queens and kings, who were Italian, French, Swedish, Austrian and Lithuanian. Bona Sforza d'Aragona, the Queen of Poland from 1494-1557, has practically changed the Polish diet by introducing Italian style of cuisine, with fresh fruit, vegetables and olive oil. Polish cuisine back then was based on meat, beans, and some strongly-spiced foods. She started to grow her own vegetables in the garden near Wawel castle. At first the Polish nobles did not understand Bona’s diet, but with time, vegetables started to be more popular among Polish people. Nowadays, a basic bunch of vegetables that includes celery, carrot, parsley, and leek is called ‘‘włoszczyzna’’ (Italian).
Polish cuisine has evolved over the centuries to become very eclectic due to Poland's history. It shares some similarities with German, Czech, Slovak and Silesian culinary traditions, but it has also been widely influenced by other European cuisines, such as Austrian, Hungarian, Jewish, French, Italian, Russian, Ukrainian, and Turkish.
Polish-styled cooking in other cultures is often referred to as à la polonaise. It is simply irresistible.
